A New Family Meal – Diet Coke Chicken

With recently re-joining Slimming World I have been taking a look at some of our family meal times. I can safely say that whilst I have not been attending group our eating habits have slowly gone back to our old ways. When it is Ian’s turn to cook when I am working late he mistakenly thinks that the takeaway apps the oven. Accidentally on purpose of course. This is even done when there is a pre made dinner in the fridge that just needs to be put in the oven so it is ready for when I get home from work.

I re-looked at some of our meals and thought perhaps a change is needed and we needed a change and to mix things up a little to help bring back the love of cooking from fresh food again. In our house time plays a big part in our eating habits. Admittedly we love any dish that can be cooked using the minimal amount of pots and pans and is also quick to make. Slow cooker recipes are a favourite in our house.

With us both out working 12 hrs of the day preparing food and a nice family meal can become a problem if we are not prepared in advance as all we want to do when we get in is kick our shoes off and enjoy a nice long soak in the bath.

Batch cooking is something we used to do a lot and is something we need to start getting into again. We moved house since last attending Slimming world, we are now settled and have re-joined at a different group so hopefully this will all fall into place again very soon.

Slimming World was re-joined again on Wednesday and so far the plan has been stuck to so fingers crossed results will show next week at group. One of our new meals we have enjoyed is Diet Coke Chicken….Yes Diet Coke Chicken!

Diet Coke is one ingredient we have never used before for cooking, have you?

This was one meal we had to try, I must say it was delicious. It was enjoyed by all of us, the teens even asked for more so we can’t complain. Lots of veg was added and it was extremely filling. It had been spoken about in group at our old group and new so I just had to try it out with my boys and see if it’s a possible new recipe that can be made and enjoyed again. The answer from my teens was a big yes. I am so pleased to be finding family meals that can be enjoyed by myself who is currently wanting to lose weight and meals that also fits into meal times that family will also enjoy to.

Ingredients used was:

    1. x 4 skinless Chicken breast
    1. Low calorie spray
    1. x 1 red pepper & x 1 yellow pepper
    1. Can of Diet Coke
    1. Chicken stock – 200 ml
    1. Cup of frozen peas
    1. Kale x 2 handfuls
    1. x 1 onion – diced
    1. Mixed herbs 1 tbs
    1. 8 tbs Passata
    1. 4 tbs Tomato puree
    1. 2 tsp Worcestershire
    1. x 1 tbs dark Soy Sauce
  1. x 2 chopped Carrots

How we cooked Diet Coke Chicken:

We heated the pan and then sprayed the pan with my low-calorie spray.

All the vegetables and chicken was then added until lightly browned.

Once browned the stock was then added, diet coke, passata, tomato puree, Worcestershire sauce, soy sauce and then mixed herbs.

This was then continuously stirred whilst bringing to the boil.

A lid went on the pan, the heat was turned down and it was left to simmer until the chicken was cooked through and the sauce had thickened.

This was so quick and easy to make, all in the one pan too – extra bonus!

This took us 15 minutes to prepare and roughly 40 minutes cooking time and most of that was simmering on its own.

This meal fed four of us and we all very much enjoyed it. This meal made a lovely change and will certainly be being made again. I enjoyed this meal with cauliflower rice Ian and the teens had rice.
